I am asking this question in general…i know each insurance is potentially different.
Insurance often has exclusions (ie homeowners in flood areas have insurance excluding flood) and so I was wonder if it's common for health insurance to exclude an illness that has been classified as an epidemic and/or pandemic.

I don't believe it wouldn't, but as they say you'd better read the fine print before you sign on the line.
The only way I could see where they wouldn't is if they made mandates that you had to be inoculated to the virus that was pandemic and you selected not to be inoculated. That there would be difficult since they would have to present you with a whole new contract.

Every insurance is potentially different. Read the fine print or just call and ask someone at the insurance company.
